
Fraser Gallop Estate Parterre Cabernet Sauvignon 2022
Established in 1999, Fraser Gallop Estate is at the heart of Margaret River’s Wilyabrup valley (20km) north of the town of Margaret River and six kilometres from the southwest coast of Western Australia. The Estate enjoys splendid isolation and a moderate maritime climate created by the Indian Ocean to the north and west.
When making this wine the aim was to use a number of techniques to emphasise complexity in a single vineyard wine, to make a wine that allows the fruit to shine, complemented by premium oak while maintaining great structure and finesse. This has been done by the addition of small amounts of Petit Verdot, Merlot and Malbec, and the use of a number of different techniques during fermentation of the Cabernet Sauvignon; this makes for a more layered and seamless wine. By having dry grown fruit we don’t have to try and concentrate it in the winery, by hand picking we have selectively sorted the fruit, using cold soak techniques and whole berry fermentation and by employing gentle cap management techniques during fermentation we don’t have to do any fining before bottling.
This medium to full-bodied wine showcases vivid crimson hues and fragrant notes of red berries, plum, and dark cherries.
Layers of vanilla custard oak and tobacco pouch add complexity, while a seamless mouthfeel enhances the overall balance. Flavours of plum compote, baking spices and chocolate with some earthiness. Grainy tannins with savoury umami and fantastic length completes the wine for the long haul.
