Description

Established in 1999, Fraser Gallop Estate is at the heart of Margaret River’s Wilyabrup valley (20km) north of the town of Margaret River and six kilometres from the southwest coast of Western Australia. The Estate enjoys splendid isolation and a moderate maritime climate created by the Indian Ocean to the north and west.

The Palladian Cabernet Sauvignon grapes were meticulously selected from the vineyard’s prime section, ensuring unparalleled quality. Our 2022 Palladian Cabernet is crafted exclusively with Cabernet Sauvignon grapes, undergoing a unique process entirely in French Oak from start to finish. The journey begins with destemming chilled grapes directly into new 500L French Oak Puncheons, followed by fermenting, rolling, and plunging, and aging all within these same barrels. By initiating the winemaking process entirely in the barrel, we achieve a harmonious integration between fruit and oak, allowing the flavors to seamlessly unfold across the palate.

One of Australia’s finest Cabernets, year in year out. Sophistication, finesse and delicacy alongside transparency of place, with layered aromatics of bay leaf, tapenade, raspberry and pomegranate. Silky, fine and ferrous, this is a Cabernet built for the long haul, with a drinking window extending through to 2042.

Magenta red in the glass, bright and lively. There's some fairly complex and lifted aromas of cassis, dried herbs, bramble, mulberry, black olive, iodine and pot-pourri. There's real drive and purity on the palate, with a core of briary dark fruits, firm, serious, sinewy tannins and perky acidity keeping things in shape. Dry and precise on the finish. Drink: 2025–2040.
