Description

1959, the year in which William Fèvre declared his first crop, marked the birth of the domain. Descended from a family which had lived in the Chablis region for over 250 years, it was only natural that he set up as a winemaker with 7 hectares of vineyards.

Over the years the domain has acquired new vineyards in Chablis, all located in the historic terroirs. William Fèvre has become one of the biggest land owners in Chablis with 78 hectares of prestigious vineyards, of which 15.9 are classified as Premiers Crus and 15.2 as Grand Crus.
Bougros sits on a very steep slope, with a gradient of more than 30%, facing due south at the foot of the hill. The shallow soil, a mixture of clay and gravel, prevents excessive yields resulting in complex, robust wines

Review
Lighter lemon yellow, the bouquet offering a light touch of menthol and especially anis. Deeper generous soil here but they think they have learnt to get the best out of it. Certainly a grand cru wealth of fruit, the acidity keeps the balance very nicely, a generous warm overcoat and good length. Nice wine!

This is generally the richest, most fruit-driven grand cru bottling chez Fèvre, but the 2020 Chablis Grand Cru Bougros is a wine of particular distinction. Exhibiting aromas of peach, citrus blossom, bee pollen and oyster shell, it's a medium to full-bodied, satiny and layered wine that's ample but elegant, with racy acids and a long, saline finish. Drink 2025 - 2050.

palate

Complex and mineral bouquet, a powerful and dense structure with a pleasant roundness. Maturing 14 to 15 months, of which 5 to 6 months on fine lees in French oak barrels, for 50 to 60% of the harvest. The end of maturation occurs in small stainless steel vats.
